Miraval Pea Pesto

Featured in The Miraval Cookbook: Recipes for a Life in Balance, this pea pesto is simple to prepare and delivers a fresh, vibrant taste perfect for a nourishing meal or appetizer.
INGREDIENTS l 2 cups English peas, fresh or frozen l 1 garlic clove l 3 tablespoons extra-virgin olive oil l ¼ cup freshly grated Asiago or Parmesan cheese, preferably Parmigiano-Reggiano
l ¼ cup toasted sunflower seeds l 1 teaspoon fine sea salt
INSTRUCTIONS l If using fresh peas, cook them in boiling salted water until tender but still bright green. Immediately transfer to an ice bath to cool. Drain and blot dry. If using frozen peas, thaw and blot dry.
l In the work bowl of a food processor fitted with a metal blade, process peas, garlic, oil, cheese, sunflower seeds and salt until coarsely smooth, similar to basil pesto in texture. Transfer to a covered container. Set aside until ready to use or refrigerate if making ahead. The pea pesto can be made up to one day in advance.
